Food of the Week: Chocolate Chip Pumpkin Bread

With Fall just around the corner, we are all breaking out the fall foods which generally involve pumpkin: Pumpkin Spice Lattes, Pumpkin Pie, Pumpkin Seeds, and finally Pumpkin Bread. Pumpkin Bread with the added bonus of chocolate chips is the feature of this article. Pumpkin bread is a fall favorite that is relatively easy to make. Around this time a year, it can be found in nearly all grocery stores and bakeries because of the abundance of Boone Hall Pumpkins and basic pumpkin-loving girls. Pumpkin bread is a very versatile food, you can eat it for breakfast, lunch, dinner, or dessert…or all five if you want! If you want to make this lovely bread, here is a handy recipe to use:

Ingredients:

  • 3 cups granulated sugar
  • 1 (15 oz) can of pumpkin puree
  • 1 cup vegetable oil
  • 2/3 cup water
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 2 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 cup mini chocolate chips
  • 1/2 walnuts (if you wish)

Directions:

  1. Preheat oven to 350 degrees F, grease and flour 3, 9×5 loaf pans.
  2. Combine sugar, pumpkin, oil, water, and eggs and beat until smooth.
  3. Blend in flour, cinnamon, nutmeg, baking soda, and salt.
  4. Fold in chocolate chips (and walnuts if you wish)
  5. Fill pans 1/2 to 3/4 full
  6. Bake for an hour or until knife comes out clean.
  7. Enjoy!
